Ingredients of Dates Walnut Cake

For Cake Batter:

  • 2 cups dates
  • 300 ml of hot milk
  • ¾ cup of olive oil/ vegetable oil/ghee
  • ¼ cup of curd
  • 2 cups of wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1  cup dates, chopped
  • 1  cup walnuts, chopped
  • 1 tsp white flour

For Baking Cake:

  •  1 cup salt

About Dates Walnut cake: It is a very healthy recipe as it does not contain maida flour and sugar which have high calories. It can be served as an evening snack also and can be stored in an airtight jar. The cake has high nutritional content due to the presence of healthy dates and walnuts.

For Cake Batter:

  1. Soak dates in hot water or hot milk for 2-3 hours.
  2. Now remove the seeds from the dates and mash them properly using hands.
  3. Put the deseeded dates into a grinder jar.
  4. Grind the mixture into a fine paste.
  5. Transfer the paste to a bowl.
  6. Add curd and olive oil to the paste. Vegetable oil or ghee can also be used.
  7. Use a blender to mix the ingredients.
  8. Add  wheat flour, baking powder, baking soda and salt using a sieve and mix well so that lumps are not formed.
  9. Add little milk  and blend the mixture for 10 minutes.
  10. Adjust the consistency of the cake batter by adding milk carefully.
  11. Add chopped dates and walnuts. Do not over-mix them in the batter.
  12. Grease the cake tin with oil.
  13. Sprinkle white flour and coat it well on the sides of cake tin. This ensures that cake will not stick on the base and sides of the container.
  14. Pour the cake batter in the cake tin. Make sure the container is half empty.
  15. Pat the container two three times to avoid any air bubbles in the batter.
  16. Spread chopped walnuts and dates on the top.

For Baking Cake:

  1. Take salt on the base of a pressure cooker..
  2. Remove the whistle of the pressure cooker and close its lid.
  3. Preheat the pressure cooker for 15 minutes.
  4. Place a stand in the pressure cooker.
  5. Now keep the cake tin or the container in the pressure cooker.
  6. Close the lid of the pressure cooker.
  7. Bake the cake for 30 minutes or more if required.
  8. Insert a knife or a toothpick till the the base of the cake.
  9. Check for a clean knife or toothpick. If not, bake for more time.
  10. Allow it to cool down and transfer it to a plate.
  11. Cut to pieces and store in an airtight jar.
