Ingredients of Suji/Rava Idli
For Idli Batter:
- 4 cups suji
- 1 cup curd
- 1 tsp salt
- 2 pinch of baking soda
- 7.5 g Eno
- 250 ml water
For Frying Idlis :
- 2 tsp oil
- 1 tsp ghee
- 1 tbsp mustard seeds
- 8-10 curry leaves
- 3 onion, sliced
- 5-6 green chillies , slit
- 1 tsp salt
- For garnishing coriander leaves
About Suji/Rava Idli Recipe: It is a very easy recipe and is a delight when taken as breakfast or evening snacks with tomato ketchup/coconut chutney/mint and coriander chutney. It is highly recommended to those who are on a diet as semolina/suji/Rava is very light when consumed in an appropriate quantity.

For Idli Batter:
- Take suji/rava in a container.
- Add curd.
- Add water now and stir it fast to avoid lumps in the mixture.
- Check for the consistency of the batter. It should neither be thick nor too thin.
- Add baking soda and salt. Mix well all the ingredients.
- Keep it aside for 45 minutes.
For Idlis:
- Grease all the plates of idli stand with little oil.
- After 45 minutes, add Eno to the mixture and give it a quick stir.
- Immediately pour small ladles of the batter to the greased idli plates.
- Steam the idlis for around 15-20 minutes.
- Take a knife or toothpick and insert inside one of the idlis. If the knife comes out clean, it indicates the idlis are cooked properly.
- Take out the idlis after they are cooled down.
- Cut all the idlis into halves.
For Frying the Idlis:
- Heat a pan and add oil.
- Add mustard seeds and let it crackle.
- Add curry leaves to it.
- Add onion and green chilies. Fry them till golden brown.
- Add salt and ghee.
- Add the idlis and toss them so that the fried mixture coats the idlis well.
- Serve hot with chutney of your choice and garnish with coriander leaves on the top.
